New Amsterdam is a dinner created by Paige Oosterom, inspired by the intimacy and grit of classic New York bistros — the kind of places like The Odeon, Lucien, and Balthazar, where the lighting is low, the tables are paper-covered, and crayons trail across the table.

Spaces where conversation stretches, ideas are exchanged, and creativity lingers between courses.

The evening’s menu will be crafted by chef Hannah Musante, whose culinary journey spans from California to some of the world’s most exciting kitchens — including most recently, Estela in New York City. Drawing from her roots and global explorations, Musante brings a confident, ingredient-driven lens to each plate, defined by seasonality, clarity, and care.
